This is made from the roe of the yellowfin tuna, cured with sea salt, then dried naturally. It is a prized product with a unique flavour. It is excellent for dressing spaghetti or for adding flavour to main course fish dishes, for enhancing canapés or as a final garnish for tomatoe bruschetta.
