Tuna mosciame

This is a ‘haute cuisine’ product which is highly prized and is prepared from the lean fillets of yellowfin tuna dried naturally. Known commercially as bresaola of tuna and called ‘tunnina ’ by the natives of Trapani, it has an intense flavour. It should be cut in very thin slices and dressed with extra virgin olive oil and a few drops of lemon juice. It is usually eaten with salad or served with mostarda on croutons. We also produce a version which is encrusted with spices.
