Tuna belly in olive oil

This highly prized portion of tuna is cut from the softer parts which cover the abdominal cavity. It is a valued part of the fish because this cut of meat taken from the ventral muscle fascicles is such a small part of the fish compared to its total weight. Our tuna belly is prepared according to traditional methods, by cooking in water which means the flavour remains unchanged. It is excellent for dressing spaghetti, or with capers and olives as a superb main course.
